vegan christmas cookies oil free Vegan Mint Matcha Chocolate Chip Oat Cookies

Happy Holidays everyone!!! I came up with these cookies last Christmas time, only last year I made them without Matcha. This year I figured I would try adding matcha tea powder for some nice antioxidants and green festive color. The color is a dull green, so they don't look all that good, but they taste good. You could always make them prettier by making them into some holiday shapes and add toppings. It's up to you, the world is your oyster mushroom. You do not have to add matcha powder, you can totally skip that part, it doesn't really do much to the taste. You could also swap the matcha powder with some cocoa powder if you want them more chocolaty. If you want to make this an oil free cookie you could try using some apple sauce instead of the oil, maybe 3/4 cup. I won't make any promises on how they will come out, but I'm sure they would be pretty good. I don't cook with oil, but will add it in my baking on holidays/occasions. I mean, it's a freaking cookie and it's Christmas time...am I right? I have a bunch of other vegan holiday cookie recipes, but sadly this month threw me a curve ball and I wasn't able to share all the videos/recipes I wanted to. Next year!

Preheat oven to 350 degrees Fahrenheit

Ingredients
-2 cups flour (I like to use oat or spelt flour, but you could use any kind)
-3/4 cup oats
-1/2 cup coconut oil or canola oil (or try using 3/4 cup apple sauce for an oil free version)
-3/4 cup vegan chocolate chips
-3/4 cup maple syrup
-3/4 tsp baking soda
-1/4 tsp salt
-1 tsp peppermint oil/flavoring
-2 tbsp matcha powder (optional. You can skip this ingredient or swap it with cocoa powder)

-Add dry ingredients (all but the chocolate chips) into a large bowl. mix.
-Add wet. Mix.
-Add chocolate chips. Mix.
-Line a baking sheet with parchment paper to make clean up and sticking easier.
-Make balls using a cookie scoop or a spoon. Makes approximately 18 cookies.
-Bake for 12 minutes.
-Take out of oven and let cool for around 10 minutes (or as long as you could wait before digging in)

Serve with some vegan milk, nog, or tea.
